Yogurt Pesto Dip

  • 1 c. basil leaves  
  • 1 c. grated Parmesan cheese
  • 1 tsp. pine nuts
  • 1 small clove garlic
  • 2 Tbsp. olive oil
  • 1 c. plain yogurt, ideally nonfat or low-fat
  • Salt and pepper

Yogurt Pesto Dip

This good and good-for-you dip is a delicious accompaniment to veggie sticks, crackers and rolled-up slices of lean meats like turkey and ham. It’s simple to create, but to make it even easier, you can substitute 2 tablespoons of prepared pesto for all but the yogurt, salt and pepper.

In the bowl of a food processor, combine basil, cheese, pine nuts, garlic and olive oil and pulse to finely chop. Add yogurt and pulse to purée. Add salt and pepper to taste.
