Turkey and Tomato Wrap

  •  1/4 c. Honey Dijon mustard
  • 2 Tbsp. reduced-calorie or cholesterol-free mayonnaise
  • 4 flour tortillas (9- to 10-inch)
  • 8 oz. sliced reduced-sodium turkey
  • 4 slices part-skim mozzarella cheese, halved
  • 1 tomato, diced or sliced
  • 8 large green leaf lettuce leaves

Turkey and Tomato Wrap

Swap boring old sandwiches with a crunchy turkey and tomato wrap. It’s quick and easy to make, and the kids are sure to love it.

In a small bowl, combine the mustard and mayonnaise.

Arrange a tortilla on a work surface and spread with  1/4 the mustard mixture.

Arrange  1/4 of the turkey in a line across the tortilla, stopping 2 inches short of one edge. Top with  1/4 of the cheese,  1/4 of the tomato and  1/4 of the lettuce. Fold one side of the tortilla up and over, tucking the fillings in tightly, then fold in the 2-inch edge. Continue rolling the tortilla toward the other side, securing it with a toothpick if necessary.

Repeat with the remaining tortillas.

Makes 4 servings.
