Fresh Tomato Pasta Sauce

  • 2 Tbsp. olive oil
  • ½ onion, cut into  inch dice
  • 4 garlic cloves, minced
  • 4 lbs. tomatoes, cored, seeded and diced
  • ¾ tsp. salt Fresh parsley, basil or oregano, sprigs or chopped, for garnish

Fresh Tomato Pasta Sauce

Unlike jarred pasta sauces, this homemade sauce has no added sugar. Its sweetness comes naturally, from fresh tomatoes.

In a large saucepan over medium-high heat, warm the olive oil. Add the onion and cook, stirring occasionally, until tender, about 4 minutes. Add the garlic and cook, stirring occasionally, until fragrant, about 30 seconds.

Reduce heat to medium and add tomatoes and salt. Cook, stirring occasionally, until tomatoes are saucy and heated through, 3 to 4 minutes. Serve atop your favorite whole-wheat pasta.

Makes 10 (2/3-cup) servings.
